A spiral dough mixer
At this volume of pizza dough you want a spiral. The fixed spiral arm and rotating bowl develop gluten without overheating the dough — the difference between a consistent cornicione and a slack, stressed mix at peak service.
One motor, a lifetime of dough. We are mixer specialists — from the Ankarsrum on a home counter to the spiral mixers running your bakery at 4am.
Volume pricing, freight and spec help for restaurants, bakeries and institutions.

Official photography from the makers we carry — machines at work, not on pedestals.
The wrong mixer is an expensive mistake — undersized machines burn out, oversized ones never fill the bowl. Answer three questions and we'll point you to the right class of machine.
At this volume of pizza dough you want a spiral. The fixed spiral arm and rotating bowl develop gluten without overheating the dough — the difference between a consistent cornicione and a slack, stressed mix at peak service.
Sausage and ground-meat work needs equipment built for it — proper seals, sanitary stainless and the right auger. We carry Pro-Cut and OMCAN for exactly this.
Milkshakes, frappés and blended service. Ceado and OMCAN cover everything from a single spindle behind the bar to high-volume production.
Bakery production usually means both: a spiral for bread dough and a planetary for batters, fillings and icing. Tell us your split and we will spec the pair — including whether one machine can honestly cover it.
For a home kitchen doing real baking, the Ankarsrum is the machine that outlasts the hobby. Swedish-built since 1940, with the motor in the base and a bowl that turns — which is why it handles stiff bread dough that stalls conventional stand mixers.
For a restaurant line, a planetary is the versatile choice — dough hook, paddle and whip cover bread, batters, sauces and mash from one machine. We'll size the bowl to your busiest service, not your average one.
Your combination is worth a conversation rather than a guess. Send us the details and a specialist will spec it with you — no obligation.
The advice is the same either way — we tell you what the job actually needs.

CulinaryProfis was founded by Chef John and chef partners who got tired of buying equipment on the strength of a catalog photo.

A chef looks at it — not a salesperson working a quota. If a cheaper machine does the job, we say so.

Size to your busiest day, not your average one. As a rule of thumb a mixer should run at 60–80% of its rated capacity for its best life — a machine constantly maxed out will fail early, and one that never fills the bowl will not mix evenly. Tell us your daily dough weight and we will size it with you, or use the mixer finder on this page.
A planetary mixer has a fixed bowl and an agitator that orbits it — versatile enough for dough, batters, whips and sauces with a change of attachment. A spiral mixer has a fixed spiral arm and a rotating bowl, and does one job better than anything else: developing bread and pizza dough without overheating it. Bakeries and pizzerias usually want a spiral; restaurants usually want a planetary.
Yes. Multi-unit and multi-location pricing is available on commercial equipment, and we quote whole projects — mixer, dough processing and attachments together. Request a quote and a specialist will come back within one business day.
Floor models ship by freight carrier. We confirm your delivery access — dock, liftgate, doorway width — before the machine leaves, and coordinate the appointment with you. Counter-top equipment ships in 1–2 business days and typically arrives in 4–7 days. Orders over $200 ship free.
Warranty varies by manufacturer, and the terms for each machine are shown on its own product page. Full details for all eight brands we carry are on our Warranty page.
Yes. We work with institutional and public-sector buyers regularly — purchase orders, W-9s, net terms for qualified accounts and quotes formatted for budget approval. Mention it in your quote request and we will set it up.
