Mixing Guidance:
- Absorption Ratio (AR) is critical for dough mixing. Avoid using 2nd speed for doughs with AR ≤ 50%.
- For high gluten or rice flour, or cold ingredients (<70˚F), reduce batch size by 10%.
- Never use hub attachments while mixing. Turn mixer off before changing speeds.
