About Planetary Mixers
Planetary mixers are the workhorse of the commercial kitchen. The agitator spins on its own axis while orbiting the bowl — a planetary motion that reaches every part of the batch. One machine handles dough, batter, meringue, mashed potato and ground meat by swapping the hook, paddle or whisk.
Choosing a capacity
- 7–12 quart, countertop — cafés, small bakeries and prep stations running light daily batches.
- 20–30 quart, floor — restaurants and pizzerias mixing dough every day.
- 40–60 quart, floor — production bakeries and high-volume kitchens.
- 80–120 quart, floor — commissaries and industrial production.
Size to your largest regular batch, not your biggest ever. An overfilled mixer strains the gearbox; an underfilled one leaves the agitator turning above the ingredients.
